‘Forget-me-not’ is a classic dry white with delicate lemon and citrus characters, a touch of lantana and a hint of summer meadow. Clean, crisp with lovely gentle acidity and a lovely lemony twist on the palate, this wine is a match made in heaven for soft cheese, a chicken tagine or just a spring afternoon in the garden.
We had above average winter and early spring rains, a cool summer and gentle ripening conditions throughout the 2022 season. This ripening period was also dry, and we didn’t experience any heat spikes at all. Veraison (the stage of grape development when the grapes change colour as they get nearer to harvest) was later than usual, and picking across all varieties was a little later than usual, too. Overall, a terrific vintage, with super quality whites and reds too.
Both varieties are picked at night to preserve the delicate flavours and acidity. Grapes are pressed off skins and cool fermented in stainless steel tanks. Neither the Semillon or Sauvignon Blanc spends any time in oak, and the wine is blended and bottled after it has been settled and clarified.
