Cockscomb Cabernet Sauvignon 2013
Tasting Notes
The colour of the Cockscomb is almost purple – it is after all a young wine. On the nose it shows bright blue fruits; violets and red currants. The palate is bright and fresh too, with red fruit and a very slight hint of varietal mint. The wine has fine tannin and a very pleasing length.
Vintage
We had good winter rains then warm summer conditions which brought about an early harvest. We had a few hot-cool-hot-cool periods which made it a little trickier to decide when to pick, but Joch reckons he got it right in the end.
Winemaking
We made the Spring Seed Cabernet in a very similar fashion to its big brother, the Battle of Bosworth Cabernet Sauvignon. That is, we fermented the grapes in open fermenters, and allowed the wine to finish ferment in a mixture of new and old French and American oak. The only real difference is the amount of new oak. The Spring Seed spent significantly less time in new oak than the Battle Cabernet. Otherwise, another cracking Cabernet out of the Bozzie stable.

They've captured cabernet in a good place here, plenty of cassis and black cherry, gently leafy and sappy. The palate's juicy, tannins sit up in energetic but smooth style, blue fruit flavors to close. Drink now.
